Emile Henry 12-by-8-1/2-Inch Lasagna Baker, Azure Blue



Excellent baking dish
Since I had already been very pleased by my Emile Henry pie dishes, loaf pan, and ramekins, I thought I would take a chance with this all-purpose baking dish, and I haven't been disappointed. So far I've made lasagna, baked macaroni and cheese, and a couple of batches of brownies, and I've gotten much better results than I did in my old Pyrex dish. The sides are also slightly deeper than Pyrex, which is very important for layered dishes like lasagna, and the interior glazing makes this far easier to clean baked on stains than glass is. It goes from the freezer to a hot oven with no problem and without much fear of it shattering.

The only thing this dish isn't the best for is dry roasting. EH recommends having at least a little bit of liquid in the dish whenever you cook in it, because that's supposed to help with the dish's longevity for some reason. For everything else, though, this is better than any other similar baking dish I've ever used.

Clean up is a breeze!
I have baked lasagnas, manicotti, haricot verts, chicken, rustic vegetables everything bake-able in this dish and I have never had an issue cleaning even the toughest messes out of it! Just a five minute soak and it wipes clean.
